Spiced Fried Octopus

Ingredients

  • 500g cleaned fresh octopus
  • 100ml olive oil
  • 1 garlic clove, chopped
  • 1 red onion, finely sliced
  • 1 medium red chilli, finely sliced
  • Yoghurt dip
  • 150ml natural yoghurt
  • 1 lemon juice and zest
  • 100g diced and peeled cucumber
  • sea salt and pepper
  • Spice mix
  • 60ml olive oil
  • 1 teaspoon nigella seeds
  • 1 teaspoon fenugreek
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon mustard seeds
  • 2 bayleaves
  • 1 sprig mint
  • 1 sprig coriander

Preparation method

Combine octopus with oil, garlic, red onion and chilli in large bowl. Leave to marinate for 1 hour.

Meanwhile, combine yoghurt, lemon juice and zest, cucumber and salt and pepper in a small bowl.

Heat a wok until it is very hot, add the olive oil and the spice mix then fry for 1 minute.

Add the octopus mixture and saute for a minute or two.

Stir through the fresh herbs and place onto your serving platter with the yoghurt dip and some fresh cut lemons.
