Spaghetti with Crab and Basil

Ingredients (serves 6)

  • 350g dried spaghetti pasta
  • 20g butter
  • 2 tomatoes, quartered, deseeded, finely chopped
  • 2 tbs fresh lemon juice
  • 2 tsp grated lemon rind
  • 125ml (1/2 cup) chicken stock
  • 300ml pouring cream
  • 1 x 140g ctn Phillips Claw Crab Meat
  • 1/3 cup fresh basil leaves, torn


  1. Cook the pasta in a large saucepan of salted boiling water following packet directions or until al dente. Drain and return to the pan.

  2. Meanwhile, melt the butter in a large frying pan over medium heat. Add the tomato and cook, stirring, for 2 minutes or until the tomato is soft. Add the lemon juice, lemon rind, stock and cream. Cook, stirring, for 5 minutes or until the sauce thickens slightly. Add the crab meat and half the basil to the sauce and cook for 2 minutes or until the crab meat is heated through.

  3. Add the sauce to the pasta and toss to combine. Season with salt and pepper. Divide among serving bowls. Top with the remaining basil to serve.
