Prawn Laksa

Ingredients (serves 1)

  • 420g Asia@Home laksa kit
  • 1 teaspoon olive oil
  • 1 1/4 cups water
  • 1 carrot, peeled, cut into short, thin sticks
  • 100g snow peas, shredded
  • 300g green prawns, peeled (tails intact), deveined
  • 2 tablespoons beansprouts
  • 1 1/2 tablespoons coriander leaves


  1. Place noodles (from kit) in a heatproof bowl. Cover with boiling water. Stand for 5 minutes or until tender. Drain. Rinse under cold water. Set aside.

  2. Heat oil in a wok or frying pan over medium heat. Add laksa paste sachets (from kit). Cook, stirring, for 2 minutes. Add coconut milk (from kit) and water. Simmer for 2 minutes.

  3. Add carrot, snow peas and prawns. Simmer for 2 to 3 minutes or until vegetables and prawns are just tender.

  4. Place half the noodles in a deep bowl. Spoon over half the laksa (reserve the remainder for the next day).

  5. Top laksa with beansprouts and coriander. Serve.
