Oysters with Lemon Dressing

Ingredients (serves 4)

  • 24 Pacific oysters, in half shell
  • 2 medium, ripe tomatoes, halved, deseeded, chopped
  • 2 green shallots, ends trimmed, finely chopped
  • 85g (1/3 cup) THOMY Delikatess Mayonnaise
  • 1 tbs fresh lemon juice
  • 1 tbs water
  • 1 garlic clove, crushed
  • Pinch of salt


  1. Arrange oysters on a serving platter.

  2. Combine tomato and shallot in a medium bowl. Top each oyster with a little of the tomato mixture.

  3. Place mayonnaise, lemon juice, water and garlic in a jug. Stir until well combined. Season with salt.

  4. Spoon lemon dressing over oysters and serve
