Oysters with Chilli and Bacon

Ingredients (serves 8)

  • 1 1/2 tablespoons olive oil
  • 3 rashers Primo middle bacon, rind removed, finely chopped
  • 1 long red chilli, deseeded, finely chopped
  • 2 green onions, thinly sliced
  • 1 tablespoon red wine vinegar
  • 16 large oysters


  1. Heat 2 teaspoons oil in a frying pan over medium-high heat. Add bacon. Cook, stirring, for 5 to 7 minutes or until crisp. Remove from heat. Stand for 2 minutes. Add chilli, onion, vinegar and remaining oil. Stir to combine.

  2. Place oysters on platter. Top with bacon mixture. Serve.
