Mussels with Garlic Crumbs

  • 48 medium (1.2kg) mussels
  • 2 cups (500ml) water
  • 100g butter
  • 4 cloves garlic, crushed
  • ¾ cup (50g) stale breadcrumbs
  • freshly ground black pepper
  • fresh chervil sprigs for garnish
  • NOTE: We used Australian blue mussels for this recipe. The mussels can be prepared several hours ahead; grill just before serving. Stale breadcrumbs are made from one- to two-day old bread, not packaged dry crumbs.

Preparation method

Scrub the mussels and remove the beards. 

Place the mussels in a large saucepan with the water, cover; bring to the boil. Simmer, covered, until mussels open. Discard the top shell and loosen mussels from base of shell.

Melt butter and garlic in a saucepan, add breadcrumbs, stir until combined.

Place mussels on a large oven tray; spoon ½-¾ teaspoon of breadcrumb mixture onto each mussel. Top with black pepper.

Grill mussels for about 30 seconds or until golden brown. Top with chervil.

Not suitable to freeze. Butter mixture suitable to microwave.
