Ingredients
- 1/3 cup water
- 12 mussels, scrubbed, beards removed
- 1 tablespoon olive oil
- ½ small red onion, diced
- 2 garlic cloves, crushed
- ½ small tomato, diced
- 1 tablespoon finely chopped parsley
- 1 tablespoon lemon juice
- ½ teaspoon Tabasco sauce
- TOPPING
- 2 tablespoons fresh breadcrumbs
- 1 tablespoon finely chopped parsley, extra
- 1 tablespoon olive oil
Preparation method
- Bring water to boil in a large saucepan. Add mussels. Cook, covered, for 3-5 minutes, shaking the pan occasionally, until mussels open. Discard any that don't open.
- Break apart shells. Arrange half-shells on an oven tray. Discard remaining shells.
- Heat oil in a medium frying pan on high. Saute onion and garlic for 2-3 minutes, until tender. Remove from heat. Stir in tomato, parsley, juice and Tabasco. Season to taste. Spoon mixture over mussels in shells. Preheat grill to hot.
- TOPPING. In a small bowl, combine breadcrumbs and parsley. Sprinkle over each mussel. Place under a hot grill for 2-3 minutes, until tops are lightly toasted. Drizzle with a little oil before serving.
