  • 500 g potatoes, such as desiree, peeled and cut into chunks
  • 2 tablespoons low-fat ricotta cheese
  • 125 g peeled prawns, thawed if frozen, roughly chopped
  • 170 g can white crabmeat, well drained
  • 2 spring onions, chopped
  • a few shakes of Tabasco, or to taste
  • 125 g English spinach
  • 4 large tomatoes
  • 1 lemon, cut into four wedges
  • BREADCRUMB COATING:
  • ¼ cup (30 g) wholemeal flour
  • 1 egg, beaten
  • ⅔ cup (75 g) dried wholemeal breadcrumbs
  • 1 teaspoon dried thyme or oregano
  • 2 tablespoons olive oil, warmed
